A solo character is a little annoying since you need 2 pathfinders or mountaineers to cross forest or mountains and won't have much space for carrying stuff around, but it's doable.
You can add a dead character for being able to use those skills if this is too uncomfortable for you, but you don't have to.

If you don't have a thief or ninja you won't be able to open the chest containing the key to Necropolis which will also make it impossible to do the 3 statuettes quest or entering the NWC Dungeon, but you can finish the game without those sidequests.

You need the jump and teleport spell for finishing the game, but you can use items to cast them and others.

I guess the best races for soloing are ninja, robber or archer but every class should be soloable, knight and barbarian are the hardest. I've successfully soloed a half-orc ninja and human archer (no relaod) myself.

I'd make luck the highest and accuracy the second highest stat at creation, the others can be raised to 255 easily.
