How is determined if our characters knows or not against what are we figthing?

Your characters automatically identify more common creatures (creatures that you, as players, would recognise instantly), like orcs, bugbears, minotaurs, hydras, zombies, etc.
However, extraplanar or otherwise rare/exotic creatures can only be learned about through experience (meeting them)

In the nort room we find a magic ring that (after some discussins) Jeese keeped for himself. We went to the south room, and there was a chest. Jeese detected a trap on it and, when trying to disable it, he activated it got hit by an arrow.
In the chest there was 2 pearls, a belt (with some magic on it), and 100 gp (To avoid troubles, we decided to divide the treasures after we leave the cave).
Then we moved on to the east room, where two humanoids (orogs maybe) appeared to figth us...............
